If you’ve read my other easy treat post, clearly I have a thing for peanut butter and chocolate. While no one in our immediate family has a medical need to eat gluten-free, I love that these cookies are so simple. Only a few ingredients and fast to whip up, but they’re delicious.
Like most things I make, I love to dip them in chocolate for a more sophisticated, “dressed-up” look. These are fast, and make great neighbor goodies. Or pour a tall glass of milk and keep them for yourself, I won’t judge. (Keep scrolling for cookie recipe)
If you want to dip your cookies into chocolate (or dip everything in your kitchen in chocolate), here’s a super simple way to make dipping chocolate:
Simple Dipping Chocolate
1 1/2 cups semi-sweet chocolate chips
5 teaspoons shortening (or oil)
- Pour chocolate chips and shortening into a microwavable bowl. Microwave for 30 seconds, then stir. Continue microwaving at 10 second intervals until the chocolate is melted and smooth.
- After the cookies have cooled, dip one cookie at a time into the chocolate. Lift cookie and gently shake for several seconds to let the excess chocolate drip back into the bowl. Lay the chocolate dipped cookies on wax paper until the chocolate sets (or cool in the fridge).
