Easy Freezer Jam

  1. In a medium heavy saucepan, combine the fruit with the lemon juice and bring to a boil over medium-high heat. Add the sugar and return to a boil. Finally, stir in the pectin and bring to a rolling boil for one minute (not longer). Remove from heat.
  2. To check if it will set up, spoon a teaspoon or so into a dish and set aside while you get your containers ready to fill. After a few minutes, check the jam in the dish, if it’s set go ahead and fill your containers leaving a 1/4 inch space at the top (for expansion in the freezer). If the jam sample isn’t set, reboil the fruit mixture adding a little more lemon juice and a little more pectin (1/2 a package or less).
  3. Let your containers set up overnight or about 24 hours then store in your freezer until ready to serve, up to a year.
